Ukrainian Uzvar

Jump to recipe ↓
Ukrainian uzvar dried-fruit drink in a glass pitcher and two tumblers.

Uzvar is a traditional Ukrainian dried-fruit drink often served for Christmas Eve and other winter gatherings.

The fruit simmers briefly, then steeps off heat so the drink becomes fragrant and amber without turning cloudy or overcooked.

Add honey only after the liquid cools below a simmer to preserve its fresh aroma.

Serving Suggestions

Serve chilled or at cool room temperature, with or without a few softened fruit pieces.

Recipe Notes

Uzvar keeps refrigerated for four days and its flavor deepens after an overnight rest.

  • 2 tbsp fresh lemon juice

  2. Remove from heat, cover, and steep for at least 2 hours.
Sweeten and Chill:
  1. When warm rather than hot, stir in honey and lemon juice. Taste and adjust sweetness.
