Kavarma is a Bulgarian slow-cooked dish of meat and vegetables, often brought to the table in rustic clay pots.
Browning the pork before a gentle tomato braise gives the stew depth while peppers, mushrooms, and savory keep it lively.
Let the onions and peppers soften fully before adding the liquid so the finished sauce tastes rounded.
Serving Suggestions
Serve with crusty bread, shopska salad, rice, or roasted potatoes.

Recipe Notes
Cool and refrigerate for up to three days; reheat gently with a splash of stock.

Notes
- Brown the pork in batches so it develops broad seared edges instead of steaming.
- Refrigerate for up to three days; the flavor deepens overnight and reheats well over low heat.
