Choripan is Argentina’s iconic asado sandwich: juicy grilled chorizo tucked into crusty bread and sharpened with chimichurri.

The sausage cooks over steady heat while the herb sauce rests, giving its garlic, vinegar, and parsley time to mingle.

Grill the chorizo gently until cooked through, then split it lengthwise for extra char without drying the center.

Serving Suggestions

Serve choripan with extra chimichurri, grilled peppers, lemon wedges, and a tomato-onion salad.

Recipe Notes

Chimichurri keeps refrigerated for several days. Bring it to room temperature before serving so the olive oil loosens.
