  • 4 whole beef or pork frankfurters
  • 4 whole soft hot dog buns split
  • 2 medium ripe tomatoes seeded and finely chopped
  • 2 medium ripe avocados
  • 1 tbsp fresh lemon juice
  • 1/4 tsp fine salt plus more to taste
  • 1/3 cup mayonnaise

Instructions
 

Prepare the Toppings:

  • Drain the chopped tomato in a sieve for 5 minutes.
  • Mash the avocados with the lemon juice and salt until mostly smooth. Transfer the mayonnaise to a small bowl or squeeze bottle.

Cook the Sausages:

  • Heat a grill pan or skillet over medium-high heat. Cook the frankfurters for 6 to 8 minutes, turning until hot and lightly browned.
  • Warm the buns cut-side down in the pan for 1 minute.

Assemble:

  • Place one sausage in each bun. Spoon on the chopped tomato, add a generous layer of avocado, and finish with mayonnaise. Serve immediately.

Notes

  • Keep the classic topping order of tomato, avocado, then mayonnaise for clean layers.
  • For a lighter finish, thin the mayonnaise with a teaspoon of lemon juice.
