Bellini
  • 2 medium ripe white peaches peeled and pitted
  • 1 tbsp granulated sugar optional
  • 1 tbsp fresh lemon juice
  • 8 oz chilled prosecco
  • 1 piece peach slice for garnish

Method
 

Make the puree:
  1. Blend the peaches with the sugar and lemon juice until smooth.
  2. Strain the puree if needed and chill it well.
Build the Bellini:
  1. Pour 2 ounces of peach puree into each chilled flute.
  2. Slowly top each glass with 4 ounces of prosecco.
  3. Stir once gently with a bar spoon and garnish with a peach slice.
