Ingredients
Plum Infusion
- 2 lb ripe plums pitted and quartered
- 1 bottle vodka or neutral spirit 750 ml, 40 percent ABV
- 1/2 cup granulated sugar adjust to taste
- 1 piece lemon peel optional
Instructions
Prepare:
- Wash and pit the plums. Place them in a sterilized 2-quart jar with the sugar and optional lemon peel.
- Pour in the spirit, making sure the fruit is fully submerged. Seal and shake gently.
Steep:
- Store the jar in a cool, dark place for 2 to 3 weeks, shaking gently every few days.
- Taste after 14 days. When the plum aroma is strong and balanced, strain through a fine-mesh strainer lined with cheesecloth.
Rest and serve:
- Pour into a clean bottle and rest for at least 2 days before serving. Serve chilled in small glasses with savory snacks.
