The Aperol Spritz is Italy’s iconic aperitivo: bright orange, gently bitter, lightly sparkling, and refreshing enough to sip before dinner.
The classic proportions are easy to remember and even easier to build directly in the glass: sparkling wine first, Aperol, a splash of soda, then plenty of ice and orange.

Chill everything before mixing and add the ice before the liquids. This keeps the drink cold without needing to stir it aggressively and flatten the bubbles.
Serving Suggestions
Serve with olives, potato chips, focaccia, or small cheese and cured-meat snacks. It is best enjoyed immediately while the sparkling wine is lively.

Recipe Notes
Adjust the soda water to taste. A dry Prosecco keeps the spritz balanced against Aperol’s bittersweet orange flavor.
